Tuna & Artichoke Salad
Phase 1 or 2

INGREDIENTS

1 large can tuna fish (water pack - drained)
1 can artichoke hearts, drained & halved
3 tomatoes, diced
1 clove garlic, crushed
1/4 teaspoon paprika
1/2 cup olive oil
1/4 cup vinegar (I use red wine vinegar)
1/cup sliced black olives
Salt & pepper to taste
Baby or regular spinach leaves

DIRECTIONS

Combine tuna, artichoke hearts, tomatoes and olives. Toss lightly. Mix together oil, vinegar,garlic, paprika, salt & pepper. Pour dressing over tuna mixture and toss thoroughly. Chill until ready to serve. Serve over Spinach leaves
The original recipe calls for macaroni, but I just left it out. It's quite tasty without it.
