INGREDIENTS3 Sweet red bell peppers, seeded and finely chopped (I use a food processor) |
DIRECTIONSCombine peppers, onion, tomato juice, bouillon & seasonings in a non-stick
pan (or regular pan with 1 tablespoon olive oil). Cover and cook 5
minutes, then uncover and simmer until tomato juice is reduced to a thick
sauce. Spoon over pasta and sprinkle with cheese. |
