Red Pepper Sauce
Phase 2

INGREDIENTS

3 Sweet red bell peppers, seeded and finely chopped (I use a food processor)
1 medium onion, chopped
2 cups of tomato juice (or V8)
1 cube or envelope of chicken bouillon
1 teaspoon dried oregano
1 teaspoon dried basil
grated Romano or Parmesan cheese
2 cups cooked pasta

DIRECTIONS

Combine peppers, onion, tomato juice, bouillon & seasonings in a non-stick pan (or regular pan with 1 tablespoon olive oil). Cover and cook 5 minutes, then uncover and simmer until tomato juice is reduced to a thick sauce. Spoon over pasta and sprinkle with cheese.
I sometimes add fresh sliced mushrooms as well, but that's up to you. This makes a very tasty sauce.
