INGREDIENTS
1 Grilled Chicken Breasts (see Grilled Chicken Breast Recipe
1-2 tablespoons mayonnaise (low fat if you're dieting)
1/4 of a large red bell pepper diced
2-3 slices red onion diced (to taste - I like a lot of onions)
1 capful Apple Cider Vinegar
Salt & pepper to taste |
DIRECTIONS
Diced chicken breast (chill first if you have just grilled) into large chunks. Add mayonnaise, apple cider vinegar, onions and red bell pepper. Mix and refrigerate for 30 minutes to an hour. Serve on romaine lettuce leaves. Serves 2 for lunch if you add some grape tomatoes and sliced cucumber |
