INGREDIENTS
1 - 1½ lb Chicken breast, cut into strips or chunks
¼ cup of Dijon or other course grain mustard
¼ cup Teriyaki sauce
1 medium onion, coarsely diced
1 medium head of broccoli (I prefer the crowns)
1 - 1½ tablespoons of sesame oil
One red pepper, cubed or cut into thin strips
1-2 cups cooked rice (depending on your appetite) |
DIRECTIONS
Mix Teriyaki sauce and mustard together.
Add chicken and coat thoroughly. Place in refrigerator to set for 20-30 minutes
Heat a heavy skillet (or wok), then add sesame oil to coat the bottom of the pan.
Add chicken and sauce. Stir fry for 3-4 minutes Add Broccoli and peppers, continue to stir fry for another minute. Add onions and stir fry for anotheer couple of minutes until all ingredients are done. Veggies should be crisp tender and chicken shoule be cooked through. Serve over rice. |
